About Us


Vegetables. Most people have such a love hate relationship with this food group. We know it is good for us, we know we need them but a lot of times we have a hard time getting them on our plate, getting our families to eat them, and having them be a part of our everyday food.

All of us want our families to eat well, but some can't seem to get out of the "cream of soup casserole" meals that many of us grew up with. Or, we feel a little intimidated by the unheard of ingredients, long cooking times, or "out of our comfort zone" recipes that all seemed to be labeled some new-age hip eating style. Veggies can be delicious, you can get kids to eat them, and they can be a part of every meal without hassle.

We have all have distinctive approaches to how we eat and prep our meals. Some of us prep food for picky eaters and little people. Some of us cook for ourselves and friends and family. We all have slightly different places we come from, but, the destination we want to arrive at is the same: heathful food with lots of color and minimally processed. Simple, easy, delicious,veggie-tastic meals. That is what we do.

Collette a working mom and marathon runner with a small family, and, a spouse that has some very*ahem* limited taste buds. She is on the road for work, and always looking to be inspired by cool new restaurants and interesting ingredients to bring home and "make-over" into more healthful meals (we call her the make-over and substitute queen). She'll put veggies in anything and knows the importance of fueling properly. Her motto: food is fuel and medicine.

Layne is a college student, a world traveler, and a culinary snob. Just kidding (sort of...)! I think Layne owned a french rolling pin at age 10 and requested a micro plane by age 8. Layne loves anything with garlic and is inspired in her cooking by her international jaunts. She also greatly appreciates healthful food to fuel her favorite past-time, cross-fit.

Natalie is a homesteader, hobby farmer, and loves to put a new spin (using her back-yard grocery store) on feel-good favorites. Anything Natalie makes usually has something in it (or everything in it!) that comes from her backyard coop or garden. Natalie and her family enjoy a very active lifestyle and they love the outdoors, and this includes cooking out-of-doors.

Claire is a med-school wife who is passionate about feeding her family (and new 10 mo. old son) the best food possible (loaded with veg, of course) on as little money as possible (shout out to all of the fiscally responsible med school students out there!). Claire is also a fitness expert and she and her hubby have studied anatomy and physiology extensively so, she knows all about input and output and what food does to our bodies.

Melissa is a working mom of two giant, sports-crazed sons. Talk about a job to keep them fed! She is always on the lookout for ways to get her boys to try new things, and, make heathy choices while at school, playing sports, and on the go. Melissa also has great alternative meals in her home as she does not eat much (or any...) meat and is a veggie lover like the rest of us.

Micah is an urban domestic goddess (or so says the author...who is NOT Micah). This vegetarian works in a big city, is an outdoor enthusiast and yogi, travels for work and volunteers, and still has time to create amazing, and healthful, meals. Micah's serious love of all vegetables was a shining example to the rest of us. Did I mention she's traveled all of the world? She has. Her rendition of Nepalese Dal Baht is insane.
